I have had another busy weekend of cooking. 


Flourless Peanut Butter Cookies 
3/4 c white sugar
1/4 c brown sugar, packed
1 c peanut butter
1 egg
1/2 tsp vanilla extract
Combine all ingredients in one bowl and stir by hand with a spoon.  Roll the dough into 1 inch balls and place on parchment paper (on a cookie sheet).  Flatten each ball down just slightly so they will spread out while cooking. 

Bake at 350F for 10 minutes or until barely browned. They can go from raw to burned in about 90 seconds so watch them.
Allow to cool completely!  They will seen very doughy but will firm up after they sit.

Yields 15 cookies



Chicken and Dumpling from Gracious Pantry website.  Healthy, filling, makes 8 servings…cant ask for more.


Basil Hummus

  • 1 can chickpeas or garbanzo beans
  • 1 1/2 tbsp tahani
  • 2 tbsp extra virgin olive oil
  • 2 scallions, very finely diced
  • 3 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1/2 tsp sea salt
  • 1/2-1 tsp cayenne pepper (optional)

I just realized I totally forgot to add the tahani to my hummus!  Woops, still taste great especially if you like pesto!  I have a ton of basil in my garden so this was a great recipe to use some of it up. I definitely need to make a ton of pesto to freeze for winter.


I recently purchased a new cook book called Healthy Bread in Five Minutes a Day. 

Basically you make enough dough for 4 loves but the dough can also be used for a ton of other carb-tastic things.  I started out by baking a loaf of bread.  Yummy. 



Breakfast Calzones

4 eggs and 4 egg whites

6oz ham, diced

1 green bell pepper

5 slices light swiss cheese

Dice the bell peppers and sauté until soft, add eggs and scramble.  Roll out the dough in to 6 circles about 6 inches across.  On half of each dough circle pile on the ham, swiss and egg and pepper mixture.  Fold over and use a fork to seal the dough.  Cook each Calzone for 20-25 minutes. 

I haven’t tried this yet but they sure smell wonderful!  Yea for breakfast food.

And now for the big finally! 

Homemade Pizza


My pizza was topped with Spicy Chicken Sausage and Mikes with traditional pepperoni.  Both with Mozzarella and salad on the side. 


Not as great as Pizza Hut but no where near as unhealthy either.  I think pizza may need to be on the menu tomorrow night as well.  Yummy!
