Homemade Granola Bars

July 25, 2010

I got a hankering to make granola bars today so after some research I headed to the store for supplies.  I could not decide what flavor to make so I ended up making 2 flavors.  When Mike buys granola bars he gets Smores flavor so I tried to recreate Smores for him.  Messy but pretty good.

2 cup Oates
1 cup Whole Wheat Flour
½ cup Chocolate Chip
1 cup Marshmallow
½ cup Light Brown Sugar
½ cup Wheat Germ
1 tsp Cinnamon
1 tsp Salt
1 Egg
½ cup Honey
½ cup Canola Oil
2 tsp Vanilla

The 2nd flavor, my favorite flavor, had white chocolate chips, raisins, and cashews.  Way good! These have a better consistency than the Smores flavor and the white chocolate chips, raisins and cashews really stand out.

White Chocolate, Raisin, Cashew
2 cup Oates
1 cup Whole Wheat Flour
1 Tsp Baking Soda
3/4 cup White Chocolate Chip
1/2 cup Cashew
3 oz Raisin
1/3 cup Light Brown Sugar
3 T Flax Seed
1 Egg
½ cup Honey
1 cup Applesauce
2 tsp Vanilla

The result, pretty ok if you ask me.  They are not perfect but they are good and will be a great snack this week.
