Heaven is….

Curried Chicken Salad
1 grocery store rotisserie chicken
salt and freshly ground black pepper
1 1/2 cups fat free Hellmans mayonnaise
1/3 cup white wine vinegar
3 tablespoons curry powder (I used red but any will work)
1 cup medium-diced celery (2 large stalks)
1/4 cup chopped scallions, white and green parts (2 scallions)

Remove the chicken meat from the bones, discard the skin, and dice or tear the chicken into bite-size pieces. Top with the mayonnaise, vinegar, curry powder, and 1 1/2 teaspoons salt, pepper, celery, scallions and mix well.
Refrigerate for a few hours to allow the flavors to blend.
Freaking delicious! Bonus, its healthy and filling. Excellent as a sandwich or by itself.
